Our Story
Slovakia holds a culinary memory that no empire ever erased. Pagan Roots & Tender Peaks is a Michelin-starred tasting restaurant built on the premise that the most honest cooking in Central Europe predates every border drawn across it.
We cook from pre-Christian Slovak mythology — the eight great deities of the Slavic pantheon — treating each dish as a ritual offering: precise, intentional, and rooted in terroir unchanged since the first settlements beneath the High Tatras.
Every ingredient is sourced within 200 kilometres. Nothing is imported. Nothing is borrowed. This is Europe undiluted.

Ritual Experiences
Ancient Slovak traditions, performed with scholarly precision and culinary ceremony. Available exclusively for private parties.
A pre-Christian Slovak wedding ceremony conducted by a practising ethnographer — binding two people before the gods of sky, earth, and spring. Followed by a private tasting feast built around your chosen deities.
The rite includes the plaiting of the bridal wreath from wildflowers gathered at dawn, the circle of fire, the speaking of the old vows in Slovak and Old Church Slavonic, and the breaking of bread over a living flame.
A midsummer table on the stone terrace, aligned with the solstice sunset. Seven courses from the summer harvest served as light fades and fire takes hold.
A full day in the mountains — foraging at dawn, fermentation workshop at midday, tasting at dusk. Led by our head chef and a regional botanist. Maximum eight participants. No phones after arrival.
A midwinter dinner by candlelight only. No electric light after 6pm. Menu built entirely from preserved, fermented, and smoked autumn harvest. The last dish is served at midnight.

Each card is a ritual document — precise method, curated ingredients, and a chef’s note written in the voice of the deity it honours. A5 format, print on 300gsm uncoated stock.
Sections II–VI recipe cards will be released progressively as the menu evolves through the seasons. All cards are available in print to guests of the full tasting menu.
Reserve
We accept reservations for the full tasting menu and all ritual experiences. Standard table reservations require 72 hours notice. Ritual experiences require a minimum of 21 days advance booking.
A deposit of 50% is required to confirm all bookings. Cancellations within 48 hours of the reservation are non-refundable.
